Zucchini Fries with Dipping Sauce

Zucchini Fries & Dipping Sauce
 
1 large zucchini
2 Tbsp. all purpose flour
1 Tbsp. water
1 cup bread crumbs
¼ cup grated parmesan cheese
¼ tsp. salt
¼ tsp. garlic powder
1/8 tsp. cayenne pepper
2 Tbsp. mayo
1½ tsp. sriracha sauce
1 tsp. lime juice
 
Preheat oven to 425 degrees. Line a baking sheet with foil. Place flour into a small bowl. In another mixing bowl lightly beat the egg and water with a fork. In a shallow dish combine the bread crumbs, parmesan, salt, garlic powder and cayenne pepper.  Coat the zucchini in flour, shaking off any excess. Dip into egg mixture and then dredge with bread crumb mixture.  Line baking sheet with zucchini strips and bake about 20 minutes, or until the coating is golden brown and crispy. While the fries bake, make the sriracha lime mayo by stirring the three ingredients together.  Serve the fries warm.
