LAMB CHOPS
INGREDIENTS
3 (5 oz.) Chops
¼ tsp. Salt
¼ tsp. Black Pepper
1 Tbsp. Mint, Julienned
1 Tbsp. Veal Butter (Prep Butter #9)
TO COOK
Sprinkle both sides of the chops with salt and pepper
Place in broiler and broil to choice of doneness
TO PLATE
Place cooked chops on sizzling platter
Drizzle butter over chops and let it run on platter
Measure out julienne mint and sprinkle over the platter
Sprinkle parsley over the surface, making sure that some of the parsley is fried in the butter
Serve immediately

1 oz demi glace
