Grilled Chicken Bow Tie Pasta Salad (page 90)
Need to get your kids to eat their veggies? This dish is the solution to your problem. My kids don't even notice the vegetables mixed in with the other yummy ingredients. It is simple to make with leftover grilled chicken or shredded rotisserie chicken.
1 (12-oz) pkg. bow tie pasta
2 cups fresh broccoli florets
2 to 3 cups chopped, grilled chicken
1 cup cherry tomatoes, halved
1 green pepper
1 cup Italian salad dressing
4 oz. Colby Jack cheese, cubed
1 (2¼ oz) can sliced black olives
¼ cup grated Parmesan cheese
Cook pasta according to package directions, adding broccoli to the cooking water for the last 2 minutes. Drain water. Toss chicken, tomatoes, pepper, dressing, cheese, and olives together in a large bowl. Add pasta and broccoli, toss lightly. Sprinkle with Parmesan cheese and serve.
