Greenland Shrimp, Heirloom Tomatoes and Curried Egg Sandwich

Ingredients:
Tuscan ciabatta
3 lbs. Greenland or tiger shrimp
Butter leaf lettuce
1 bunch fresh cilantro
2-3 lbs. heirloom tomatoes
8-10 hardboiled eggs, minced
1 large red onion, small diced
2 cups mayo
Salt and pepper to taste
1 fresh lemon
Extra virgin olive oil
Directions:
In a four quart sauce pot, bring two quarts of water to a simmer. Add a pinch of salt and pepper with a squeeze of lemon and add shrimp with shell on and poach shrimp. Strain shrimp and put into ice water to stop cooking. With a whisk, mix mayo, honey, and about one tablespoon curry paste together. Add onion, minced eggs, and chopped cilantro to the mixture. Next peel shrimp and you can slice to lay on top or chop and add to mixture. Drizzle olive oil on ciabatta and toast until golden brown, then layer your sandwich and enjoy.
