The Perfect Omelet
2 Eggs
¼ cup grated cheese
butter
Salt and Pepper to taste

Method:
Wisk two eggs in a bowl till blended
Melt enough butter in medium hot 8 inch frying pan to coat the bottom.
When butter is bubbly, pour in eggs and swish it around to coat the bottom of the pan.
After about 30 seconds, start to gently swish eggs around the pan so the eggs slide easily on the bottom. This will keep them from sticking. Every so often, give them a gentle swish to keep them from sticking.
Cook until the top of the eggs are opaque, then slide the omelet out of the pan until half of it is on your plate. Hold it right there... now add your grated cheese and flip the remaining omelet over the top of the cheese. You did it! The perfect omelet.
