Spicy Bean Salsa

Ingredients:

1 can black beans

1 can red beans

1 can pinto or white beans

1 can sweet whole kernel corn

3/4 cup chopped purple onion

3/4 cup mixed bell peppers (some of each color makes it fun)

1 4 oz can of diced jalapeño peppers (or 2 finely diced, small, fresh ones)

1 small can of green chiles (you can also use fresh if you have them!)

1 can chopped tomatoes w/chile (or again, you can cut up fresh - about a cup worth)

1/2 bottle Newman's Own Oil and Vinegar dressing (or other Italian)

1/2 bunch of cilantro

1/4 cup lime

4 small cloves fresh garlic

1 tablespoon Oregano

1 teaspoon Coriander

1 teaspoon Cumin

Salt and pepper to taste



Process:

After cutting anything that needs chopped put all items into a large bowl and mix. Let it sit for a couple hours in the fridge before serving so all the flavors can mix together. Taste and adjust seasoning as needed prior to serving.
