2 finely diced apples
2 cups cubed zucchini
2 cups cubed yellow squash
1 diced onion
6" sprig rosemary (or 1 Tbsp. dry)
1 cup chicken or veggie stock
2 Tbsp. maple syrup
½ tsp. cinnamon
Salt to taste
Preheat oven to 350 degrees.
Combine apples, zucchini, squash and onions in a 9 X 13 pan. Add maple syrup, veggie stock, and cinnamon. Toss to combine.
Place rosemary sprig so that it rests in the stock.
Cover with aluminum foil and bake for 25-30 minutes.
Remove the rosemary sprig before serving.
