Overnight Steel-Cut Oats

Overnight Steel-Cut Oats:

4 cups water
1½ cups apple juice
1 cup steel-cut oats
½ cup pearl barley
1 tsp ground cinnamon
½ tsp grated fresh ginger
¼ tsp salt
Optional Toppings:
Toasted pecans
Chopped apple
Brown sugar
Honey, Milk or cream
1. Spray an oven safe dish (mine is corningware and it is about 1.7 quarts) that fits into your 5-7 quart slow cooker with non-stick cooking spray.
2. Place water, apple juice, oats, barley, cinnamon, ginger, and salt in dish and stir to combine.
3. Place dish directly inside slow cooker insert. Cover the slow cooker and cook on LOW for about 7-9 hours. (If you want to extend the time even further set it to WARM instead of LOW)
4. Remove dish carefully and serve with desired toppings.
