Mexican Lasagna
1 lb. ground beef
1 onion, chopped
1 (26-oz.) jar spaghetti sauce
1 egg, beaten
16 oz. cottage cheese
½ lb. Mozzarella cheese, shredded
½ lb. cheddar cheese, shredded
½ cup Parmesan cheese
1 pkg. flour tortillas

Optional toppings (lettuce, tomatoes, sour cream, chopped olives)
Preheat oven to 350. In a large skillet, brown the hamburger and onion; drain well. Stir in the spaghetti
sauce. In large bowl, combine beaten egg and all the cheeses. In a 9 x 13 pan, arrange a layer of tortillas;
tear them in pieces to fill in all the spaces. Add a layer of sauce and a layer of cheese. Repeat several times,
ending with the cheese. Bake 30 minutes and serve hot, topped with lettuce, tomatoes, sour cream, and
chopped olives as desired.
