House Smoked Trout Cakes
Trout Cake
-Smoked Trout 3 pounds
-Mayonnaise 1 ½ cups
-Red onion, small diced
-Scallions 1 cup
-Japanese Bread crumbs (panko) 2cup to 2½ cups
-Salt & Pepper to taste
In a large bowl crumb the smoked trout into small pieces. Add the mayonnaise, diced red onion, scallions and half the bread crumbs. Mix, the mixture should be wet, but not sticky. If the mixture is too wet add more bread crumbs until it comes together and holds a shape of a ball, and does not stick to your hands. Then portion the trout cake mixture to desired size, and pan fry in canola oil until golden brown.
