Feta Salad

Ingredients:
2 Granny Smith Apples, thinly sliced
6 oz feta cheese
12 oz spring mix lettuce
Candied Walnuts:
2 cups boiling water
1 cup walnuts, halves & pieces
1/3 cup sugar
1 tsp cayenne pepper
1½ tsp salt
Vinaigrette:
1 cup canola oil
½ oz dijon mustard
2 oz honey
2½ oz apple cider vinegar
cayenne pepper & salt, to taste
1 tsp fresh lemon juice  


Procedure:
In a small pot, bring the water to a boil. Add the walnuts. Bring back to a boil and cook for 2 minutes.
Drain the water and place the walnuts in a small bowl. Immediately toss with sugar, cayenne, and salt.
Lay the nuts flat on a lightly greased baking sheet, bake for about 8 minutes at 350. Check frequently,
they burn quick. They should be golden brown and dry.
In a medium bowl, combine everything but the oil. Slowly, whisk in the oil till you achieve a
vinaigrette consistency.
In a large bowl, toss the greens with the vinaigrette and arrange on plates, garnish with feta, walnuts
and apples.
