Cornflake and Ranch Chicken Bites
4 boneless, skinless chicken breasts
1 cup buttermilk
1 cup crushed cornflakes
1 pkg Ranch dressing
½ cup shredded parmesan cheese
Combine cornflakes, Ranch dressing and parm. Dredge chicken in buttermilk then dip into dry mixture. Pan fry in oil, drain and cool. Eat cold.
Watermelon and Feta Salad
3 cups watermelon, cubed
1 cup French feta, cubed
1 medium bunch arugula
½ cup olive oil
1 lemon
Salt and pepper to taste
Combine first three ingredients in bowl. Zest lemon on top and then juice lemon into bowl. Drizzle with olive oil and then sprinkle with salt and pepper.
