Agua Chile de Camarones, Ceviche

12  White Shrimp
½ Cucumber
½ Bunch Cilantro
2  Serrano chiles
½ Cup Fresh lime juice
¼ Cup Canola oil
½ Tbsp. Salt
 
Cut shrimp length wise once, and width wise once. Remove and reserve the seeds from 1 cucumber, place the seeds and 2nd cucumber into a blender with lime juice, cilantro, and 3 Serranos. Puree and add oil to emulsify. Slice the first cucumber into small pieces and in a large bowl mix with shrimp and lime juice mixture. Serve with Tortilla chips, or alone for a delicious carb free treat!
