Arugula Watermelon Salad with Chicken Recipe

Seedless Watermelon
Whole chicken breast
Fresh Baby Arugula
Champagne Vinaigrette
Salt and freshly ground pepper to taste
Sweetened Dried Cranberries,
Honey Roasted Pecan Pieces,
Bacon bits, optional
¼ cup crumbled feta cheese
1. Stand the sliced watermelon wedges on a clear square plate into a triangle shape
2. Fill the center of the plate with the baby arugula heaping it to the top of the watermelon slices.
3. Top the baby arugula with hand crumbled feta cheese. Pour Champagne vinaigrette over the arugula & feta cheese. Top with your topping choices.
4. Cut grilled chicken breast in half and slice into 1/4" slices. Fan tail the chicken slices on the plate corners. Dizzile a bit of the champagne vinaigrette on the sliced chicken breast.
